If I have a domain assigned to an experience and a SSL certificate tied to it, can I switch between which experience version I should use at any time, or will that cause problems?

SSL certificates are tied to the domain, therefore you can switch Experience Versions without impacting the domain and SSL certificate.

Is that true regardless of which ***.onlosant.com name the CNAME definition is pointing to?
Or should the CNAME definition always be pointing to the APPID.onlosant.com slug?
The CNAME definition should always be pointing to the APPID.onlosant.com slug. You can read more in our docs in the Experience Domains section, specifically Domain Configuration.
The DNS configuration you set is independent of versioning, also!
