Would the calculated variables “reach” the device state node at the same time if executed one or the other way?

I would recommend discovering the answer to this by triggering both workflows, then checking which finished reporting first. 
There is also more information on this in the Losant University “Workflow Mechanics” video, which is in Course 5 Chapter 4.
