how can I select just the fields I want, and not get every column?

Currently the table export for the Losant API cannot export specific columns (schema documentation). You could work around this by creating a new table with the columns you would like, but I will submit a feature request to our dev team for this functionality and keep you updated if it is implemented in the future.
