Detecting topic subscription

If I have a device that is subscribing to a custom topic, is there any way for me to know that the subscription happens in the Losant environment?

There is not currently a way for Losant to detect if a device has successfully subscribed to a custom MQTT topic.

I would suggest that, on your device, if a subscription to a specific topic is successful, to publish an MQTT message.
